ingredients :
- 4 cups spinach, sliced fine)
- 6 tbs ghee
- 1 small onion, minced
- 1 piece of ginger, minced
- 4 green chilies, minced

salt and chili powder to taste
1/2 tsp each of garam masala and powdered cumin seeds
1 tbs poppy seeds
a few tbs milk
1/2 cup of cream
a few drops saffron essence

method :
- Heat 4 tbs of ghee and fry onion, ginger and chillies till soft. Add the spinach, along with the garam masala cumin, salt and chili powder.
- Cover tight and let the spinach cook in its water till soft.
- Mash to a paste. Cover the spinach and set aside for one night in a cool place.Also soak poppy seeds in milk overnight.
- Next morning, drain out the milk and set aside. Fry poppy seeds in 2 tbs of ghee to a golden color.
- Then add the same milk, spinach and cream. Cook till the spinach turns quite dry.
- Mix in the saffron essence and serve at once.
